YouTube uses h.264, and since Chrome supports this codec, why not have an option for it? Note that it only works for the MP4 formats, that is fmt=18, fmt=22, and fmt=37.

I'd recommend having 2 functions:
-ONLY use HTML5-compatible youtube formats (completely ignores the others)
-Use HTML5 tags if format is compatible (HTML5 for fmt 18, 22, and 37, but flash for the rest)
